I know this is really random to ask you, but I'm kinda makin this story where it's TF/Greek/Roman mythology...and A) don't know which TF universe to use and B) who to pair up Starscream with...

I wouldn't know, you should probably go with the universe you're most familiar/comfortable with, for easier writing.
Same goes for the pairing: shouldn't you write the one you like the most? If you can't pick, try to think of who'd best fit the Eros & Psyche roles.
The only advice I feel like giving is to keep greek and latin mythology separated once you've picked which one you want to go with.
