Posing and the such in Garry's Mod isn't really something that can be taught. The way I learned was by constantly experimenting and playing with the different tools. If you open up the game and have a play around, trying out the tools on ragdolls, you'll very quickly find out what tools can be beneficial for what you want to achieve.
Just have a play around! And be sure to post what you make.
