This page comes with a little something special. A recipe from Dan for the Portobelligerent Pita sandwich!Take one large portobello mushroom cap, brush with olive oil, lightly season with salt and cayenne pepper, grill 'til cooked through. Slice into strips. Warm one pita bread and slice into two pockets. Dress some arugula lightly with olive oil, salt, balsamic vinegar, and several dashes of Tabasco sauce. Stir a few teaspoons of adobo sauce from a can of chipotle chiles into some mayonnaise, add a dash of lemon juice, and salt and pepper to taste. Spread some of the chipotle mayo inside the pita, add some of the arugula and the sliced portobello mushrooms. Top of with sliced tomato and shredded pepper jack cheese. Serve with attitude.
