Due to the nature of Contractor's, they aren't really a natural race, they are more like flesh golems that are made by necromancers or summoners. So I can't just say that they evolved from cavemen or something lol. The writing above is the summary written by Wultad the Scribe, he's a Contractor scholar, the original text were written in old Contractor language by one of the original people Sanguis brought up and spanned over 20 pages.
There are only a handful of copies of books on Contractors available to the public since they keep most written records to themselves and are known mostly through word of mouth. These book copies they are basically found in Ares' town libraries, or rather more precisely, towns in Dragon-Hallow that are situated near one of the 3 Contractor guilds.

Mavis and Ira are from a race called Contractors. Funny thing about Contractors, they can't multiply like normal races, sure they can get children but their children isn't born a Contractor, how they get more Contractors onto the surface of Zion is by a ritual that transforms people into Contractors. Be they elves, humans or anything, they could be transformed into the race called Contractors. (something like werewolf transformations) So in actuality, a Contractors' race should be officially recorded as Race: Contractor (-insert original race here-).
It was most likely an accidental discovery by the people who were brought up by Sanguis the Kind. They didn't know that the burial ritual they performed was actually the Necromancer's personal death transformation spell that kills and resurrects the people conducting it to full health with the side effect of inheriting body traits of a certain person (most likely dead).
This ritual would soon evolve into the induction ceremony of the 3 guilds for normal people to become Contractors. For ages, even up till now, the body traits that were incorporated into all Contractors in Zion were always the body traits of Sangius the Kind. The transformation mostly applies to the person's body build, height and mass, the color of their irises turns blue and the fact that they can be infected with 'The Halt', a stage in where their bodies will slowly crack and stop moving. The change is irreversible, once a Contractor always a Contractor.
Oh don't be afraid though, people don't become Sanguis the Kind after becoming a Contractor, they just grow into their Contractor Equivalent. Skinny people by their race standards will become skinny people by Contractor standards and so on. In short they become 'descendents' of Sanguis the Kind in a way.
Other than that, nothing else changes, they wouldn't sprout horns or extra limbs and organs. Any biological abilities they had in their original race would be kept even after becoming a Contractor, like how mermaid Contractors can still breath underwater or how winged Contractors are still able to fly and so on.
Now back to the title, even though Sanguis, being the root of all Contractors might be an accident, he's has become quite an important and honored figure in Contractor Culture, being looked to as the forefather of the entire race, a symbol of strength and a guardian to kids. Even one of the most told Contractor children stories are of how he would save children from nightmares and monsters.
The picture in the text shows Sanguis holding the head of the Necromancer, it's a pure reminder of how it all started. Though other styles do exist, this is the most common depiction of Sanguis the Kind in Contractor culture, it can be seen as statues in all the 3 guilds.
