If you only know the basic premise of the stream, you've kind of missed a lot. The thing spawns like 3 new memes a day.

The Helix Fossil wasn't intentional, it was just the first or second item in the inventory for a lot of the early days, and due to the general chaos tended to get selected a lot at random times, and the joke became that Red was always consulting it for guidance. It's also one of the the central items in the religious/political system schism among the players (I told you you've missed a lot) and has actually influenced the course of the game when everyone fixated on actually using it to revive Omanyte for injoke reasons.
