its not so much focusing on where he thinks the water will drop, he just focuses on the edge of the fork, i'm assuming he's droping the water on the edge of the fork so as long as he has aligned the falling droplet perfectly with the edge of the fork the water droplet will also be in focus.

i suppose he focused at the place where he expected the drop to be. This is exactly what i'm doing - i temporally put small object on water's trail and focus on it.
