Over time and with effort you learn more about her emotions, and eventually her honest trust. In the end, you propose marriage to her and she accepts and grants a badass sword to aid you on your quest to become Elden Lord. On defeating the game you have the option to be Elden Lord or to allow Ranni to deploy her plan. That's not simping, thats building a trusting relationship. Sad that kids can't tell the difference between the two these days. As for trusting her, she flat out tells you that she's more than willing to betray everything to upend the whole of what came before. She warns you multiple times that a dark and lonely road awaits you should you follow her and gives every opportunity to back out. In all honesty Ranni's ending is the closest I've ever come to a happy or good ending in a souls game. The ending also implies you are the champion, her partner and both of you are now together."
