We all know just what she's thinking! I always knew that honesty is another very valuable key in friendship. You would be surprised how well Applejack's character plays in certain situations in the show.
The episode with her in her younger days lying about everything was the perfect of backstory on how she became a more honest and a trustworthy pony. Not only this, but there are so many other reasons why honesty can be a bit too much
It wasn't until she was chosen for Rarity's fashion assistance where she became too honest and hurtful. Honesty can be a bit confusing to some, but I feel Applejack has much control over it nowadays.
