I just recently finished as Lead Concept Artist on Rogue one, which took about two years! I have many pieces in the Art of book, but willbe sharing plenty here too soon! Including The Force Awakens art too
This is the concept I did for Vaders Castle during post. I think this was only the second version I did, and pretty much saw its way through to final.

It felt a bit uncanny in the movie that Darth Vader basically lived in the eye tower from Mordor. I disagree quite heavily with how the movie handled Vader as a character, but designwise, was there any particular motivation? Because this was one of two design choices that just didn't make a lot of sense to me. I would love a discussion on the matter.

Thought in the movie and until today that it looked like Mordor. Not only becaus the lava and its colour but also because of the cannelures etc.
