I made an intellectual exercise of seeing things from Zuko's perspective, and IMHO he appreciates Iroh but is irritated that the man is so calm and patient, whereas he feels time is running out. Zuko desperately wants Lord Ozai's approval, and not only because he was branded and banished, but since childhood. I think Zuko is affraid to have a too close relationship with anyone, especially a fatherly one like Iroh is offering.

The Zuko/Mai conversation seems a bit odd

It seems that a realtionship between them is canon in season 3, and we only saw a small part of Zuko's childhood in Zuko Alone, so it's reasonable that he had more interaction with Mai that we didn't get to see
