Why do humans who don't eat meat go out of their way to make vegetables taste like meat?

Like, you know how they made plant-based burgers that taste almost like meat? If you hate meat SO much that you will never eat it and the mere thought of eating an animal makes you want to puke, why would a human make vegetables taste like a dead animal that's been grilled?

Yeah, but why? By eating those plant-based burgers, aren't vegans conceding to the notion that meat actually tastes good? Even if you want to be included, would that mean you concede to the notion that grilling animals and plants are the same? I'm just saying.
