Gaster keeps being nervous and Sans lost his sass...
Well, for Sans it is like: "I can either have my brother or my freedom." He knows he won't ever get out with the mindset of his brother like this and he can't force him to change. So he abandoned all hope and chose to feel nothing instead. At least, this is how I see it.

It's pretty funny how Gaster holds a sleeve over his palms so stuff doesn't fall out. I mean it would be sad if I didn't think of that comic with the marshmallows.
