The books I have about Disney and animation style drawing are actually very high level stuff that expects you to have done a lot of live model drawing before and during. I know what you are talking about though. All the how to draw books are like that. Its kind of sad when someone is starting out and thats what they have.

The ones directly from Disney and others are very good. In fact, one of my favourite tutorial books is the Looney Toons one here: www.amazon.com/Draw-Looney-Tun…
That said, it is as you said; it's not good for somebody starting out. In fact, a lot of people use much more subpar material as reference coughcoughChrisHartMangabookscoughcough which is horrible.
