Well, I believe it is either to avoid escaping information, or to discreetly prepare for a possible assassin attack in the area. It's an intelligent attitude on their part, because they can hide reasonable amounts of information about your plans...

But I guess an assassin still knows how to get his information, even if he didn't hear everything from the conservation

It's ok, don't worry about that, I understand you! And yep, they can find information with another people that it's connected with the Templars, making a specie of investigation (Like Arno and Elise in AC: Unity!)
And I think this last choice it's just for the last causes, and don't worry about it, it's just a example (A restrict, but, if the situation it's too difficult, a good choice)!
