What is wrong with actual characters that does not involve with from the film for the roles? Do you think it is okay that I will put Emma Watson in the role of Hector Rivera and me for Imelda River along with the Chow family to fill the Rivera family?

Yes it's okay if you wanna use Emma Watson and real life people,the reason i say "don't use the actual characters from the film" is because if they did it would be uncreative and maybe even lazy. Like for Example if someone just put Hector in the Role of Hector,it just doesn't feel right in what is called a "Recast meme"
