hello yes I would like to return one (1) newfound wheat allergy for a refund? I understand I didn't purchase it in the traditional sense, but it is costing me money, soooooo..... Gluten isn't even a problem for me but gluten free things are usually going to be wheat free. Usually.
Why is so much gluten free stuff kind of... gritty??
My palate is probably best described as that of a slightly picky scavenger so this scribble is probably a pretty good fit
Edit: Wow this looks real bad in that new Eclipse layout huh? And why does Eclipse look like it's trying to be a mobile layout even on desktop? Why is everything so big????

Ooo I see, I am actually the same, I wont die or anything but it still is a pain so I feel you aha (I have eczema and it gets really bad unless I avoid). I actually have a bunch of lil allergies/intolerences, can't have eggs or dairy either so idk how helpful my recommendation be since I am avoiding those too aha.

At first I would get bread and things at a local gf bakery, so maybe you could check if there is any like that near you.

Recently though I found this one www.littlenorthernbakehouse.co… and I really like it, holds up a lot better then most and is soft and nice. Its dairy and egg free as well so not sure how helpful that is to you aha

That's like my cat when he gets excited about finding a noodle on the floor then remembering he hates noodles. XD
I tried to go gluten free when I was really sick a few years ago. It made me feel worse oddly enough. Guess I don't have a gluten problem. I did develop a mild-moderate tree nut allergy while I was sick though (and didn't realize that was my problem until last year), so that's been annoying. But I remember trying to eat this gluten free bread that was made from bamboo and had to stay in the freezer. It was... strange to say the least. It was really sticky once it thawed out, like it had been soaking in syrup for a week. Didn't taste like syrup, unfortunately. Oooh, but Glutino chocolate chip cookies are the best cookies I have ever had. They have a slight oatmeal taste to them despite not having any oatmeal in them. I think they're tapioca and rice flour.

hey! if you have any Krogers in your area, the brand Pure Knead is really good!
It's really doughy though so I'd recommend toasting it to get moisture out, but the texture is the best I've ever had (as someone who also can't have wheat or gluten!)

Ack, I feel you on this one. Something about the lack of stretch in the dough without the gluten so you gotta add a million things to get a similar effect. Darn food science. There's a lot of GF foods that I prefer over the gluteny original versions, but GF bread that is good is hard to find. It's actually easier in some of these cases to make it yourself. The King Arthur line of box mixes are phenomenal and I like their flour blend too.

WOW I AGREE. for future reference don't try box pancake mix (unless you read some reviews first anyways). the first one I tried after going gluten free (last summer/early fall was when I found out) absolutely tasted like eating sand and i do NOT recommend
Now what I DO recommend is Udi's brand for things like oven bake pizzas and some dessert box mixes and Canyon Bakehouse for loaves of bread and bagels and the sort
I also found out that they make pills that you can buy that "help" with the after effects of gluten consumption in small amounts (not like "ill take a pill and go eat this donut" but like "this is a buffet there might be cross contamination, maybe i should take one just in case"). I have no idea what kind of studies have been done on them and if they even work but they've seemed to work for me so far but generally they're just labeled as some spinoff of the term "Gluten Aid" that helps in digestion of small amounts of gluten
personal opinion: the majority of gluten free food manufacturers just straight up sell us sand mixed into bread. also expect most of them to be organic and vegan too for some reason (which just helps with that lovely price that already comes with it being gluten free)
edit: also once I ate half a bag of a candy that said "gluten free" on it and then got sick and went back and realized that in fine print under the ingredients it said "may contain wheat" anyways :') now I have trust issues with my food thanks

i have a light allergy. so frome time to time i can eat things without real issues but i should not eat it every day.

That's good that it's not too severe! Mine isn't as bad as it could be either, I seem to be able to have a little bit every once in a while. Not as often as I'd like though, still figuring it all out.

I haven't even tried Eclipse yet. Now I'm tempted to do so, just find out what it looks like, LOL.
I'm personally not a fan of "gluten-free" brands because a lot of people who buy those products don't really have gluten issues and simply self-diagnosed. At best, they're genuinely sensitive to it and could potentially benefit from lessening their gluten intake. At worse, they think it's going to cure their child's ADHD, autism, depression, etc. A lot of gluten-free products still have a small amount of gluten in them, though, and while those self-diagnosed people aren't affected, some people can be very effected. That being said, I'm glad that some businesses, like Papa John's, have a disclaimer on their website warning people with Celiac disease that their gluten-free foods aren't actually 100% gluten-free.
I hope you're able to find a brand of bread that's safe for you to eat! Be careful around the more popular gluten-free stuff, though; a lot of it was made in response to the aforementioned trend, not to help people with a genuine need. Gluten is also only one part of wheat, and the protein is often simply separated from the wheat in gluten-free products. The wheat isn't necessarily eliminated.

Oh yes SAME :'D I've known people who spontaneously decide they're allergic to gluten (or something else like msg) without having a real sensitivity. I was angry when the blood test came back with wheat allergy haha. But I guess the one upside of the whole gluten fad is that hopefully it's a little easier for people with Celiac's and allergies and such to find suitable foods!
Thanks for the tips! I've read a lot of ingredients these last few weeks because that's definitely true! Wheat is sneaky. Wheat invades all.

Truth be told, it's not that much easier for people with Celiac disease because of the rising trend. They're still basically playing roulette every time they buy a gluten-free product. The only difference is that there's more blanks in the chamber.
The only thing I ever actually enjoyed that was gluten-free was a bag of pretzels my aunt couldn't finish. They were alright. I think the reason GF products taste so odd and feel so grainy is because, by the end of the extraction process, you're left with a mound of super-starchy flour that isn't nearly as nice of a texture. That's all gluten is, really -- a texture bonus.
Again, I really hope you're able to find a brand of bread that's safe for you to eat! Sandwiches are way too awesome to give up!
