I think older Snape needs a few lines on his face, done with a much finer pen. Not many; he's only in his thirties. Maybe one sneer-line beside his mouth, and a small crease at the inner corner of that arched eyebrow.
I'm thinking of it only as a drawing. As a knitting pattern you're quite right not to add any extra lines. I expect the finished patch will look the right age.
