This is a continuation of my theory from before, about why this AU's Junko and her team of scientists made the Despair Experiments the way they were. They were aiming to torment Class 77 by exploiting their personal weaknesses (well, most of them) and presumably use them to spread despair around Danganronpan Japan.
Kazuichi: He made himself look intimidating to look tough like his bullies (but inside he isn't that bad), so he was turned into a shark humanoid to reflect that. He now looks kinda scary, but who knows what he's really like?
Sonia: She wanted to balance her lives as a princess and as a normal student. Sonia became angry that she could no longer live a happy life and instead live a life as a screaming, tortured pseudo-banshee. (They presumably showed Sonia's experimentation to Kazuichi to drive him further into negativity.)
Gundham: Junko knew about how much Gundham cared about animals as the Ultimate Breeder, so she turned him into an animal himself. And to go even further, the diabolical head scientist did one of the most horrible crimes she'd ever done; killing his Dark Daevas of Destruction while forcing him to watch in order to make him go even more insane and bestial. Now he's become an insane beast who still tries to care for his hamsters while in denial that they're gone.
Mikan: She had a massive crush on Junko and would even devote her life to her if she wanted. Junko felt like Mikan would be very useful, so she turned the Ultimate Nurse into a venomous naga. She appears to be happier in her new life, because originally she was weak and defenseless against everyone who tormented her and now she could finally get the opportunity to lash out at people if she was able to. You know how sadistic she was as an Ultimate Despair, so it's possible that she can go on Ultimate Despair killing sprees if she's let out.
Mahiru: She was very assertive and abrasive, yet Junko and her team decided to break her by turning her into a human camera and it seems like they got what they wished for. They also knew about her Ultimate Photographer talents and made her into a human security camera, presumably to track anyone who was up to no good after the incident concerning Makoto and Mukuro.
Hiyoko: Although Hiyoko looked cute and pretty on the outside, she was a brat and a bully on the inside. Her appearance as an experiment reflects that; she has to wear a mask because she looks absolutely horrifying when it's off. She was overwhelmed with shock and grief as she saw her new appearance, as she thought that her ugly appearance was what the others saw when they thought of her.
Peko/Fuyuhiko: They were originally designed for different purposes (which I'm not so sure about), but Fuyuhiko lost his memory and accidentally provoked Peko into freezing his eye. To drive their relationship even harder, the two were chained together and forced to stay in the same cell. While Peko was regretful after accidentally harming her friend, Fuyuhiko had forgotten who she was and why she was treating him like this.
Teruteru: The team thought that Teruteru's perverted attitude was very annoying, so he ended up losing his mouth and getting a replacement mouth on his stomach. Teruteru's stomach mouth would get in the way of his Ultimate Chef abilities by devouring the food that he would prepare, as well as revulsing everyone near him. It's possible that if he were to end up at the Hanamura Restaurant, he'd end up scaring his mother and causing a ruckus with the customers, so he'd have no choice but to stay.
Ibuki: If you thought that Professor Junko's worst crime was forcing Gundham to watch his beloved hamsters die, what she did to Ibuki may be much worse. She decided to torture the Ultimate Musician by over-amplifying her hearing and voice so she'd be tormented by noises forever, preventing her from using her Ultimate Talent in fear of causing herself pain. Nullifying her senses of sight and touch may make the poor girl paranoid, so she'll always be fearful of where all of those horrible deafening sounds are coming from and also if the people near her are friend or foe.
Impostor: He had no identity of his own, so he had to take the identities of others in order to be visible. That's why he was turned into a shape-shifting blob, after all. (However, it's possible for the Despair team to brainwash him into becoming evil and go around on killing sprees while changing himself to stay out of trouble.)
Akane: She was obsessed with food, so she became a ravenous beast who wanted to eat everything. It's possible for her to be let out and go on a cannibalistic rampage, makes sense after she was mentally reconditioned into becoming a feral wendigo.
Nekomaru: He was a powerful athlete who could energize his clients, and what better way to torture him than to turn him into stiff wood? Nekomaru's constantly in pain as a result of his wooden joints, and he is given morphine painkillers at the cost of getting serious nightmares every night. They could've just left the poor man to suffer slowly, but maybe they gave him the nightmare-inducing painkillers to torment his mind and slowly drive him into insanity?
Chiaki: SPOILERS BEWARE! Believe it or not, the Chiaki in DR2 was actually an AI-controlled replica of the real thing. The Despair team presumably found out about this, and reprogrammed her into being forced to obey. They wanted her to be a security system since Mahiru wasn't functioning well due to being in constant pain from her (biological) photoshooting.
Nagito: He willingly gave himself up to Junko, and this combined with the fact that he's a scheming jerk gave him the opportunity for her to take mercy on him, turning him into an agile chimera. Like Mikan, Nagito seems to be happier as an experiment since he can go on rampages (and annoy Hajime).
Hajime: He obviously hated what he did as his Despair identity Izuru Kamukura, so he was turned into a living hallucinogen generator and he would constantly be plagued with memories of the atrocities that the Despair had committed. His fast-growing hair was also styled to look like Izuru's to remind him of who he once was, and he hates it.

P.S. If the entire theory considers the fact that the experiments will also be used for displaying, then some of the experiments may have uses for this purpose as well. Mondo may be used to store electricity for the generator, Mahiru and Chiaki may be used for surveillance, Hajime may be used for brainwashing and Akane...well, anyone who tries to protest about the unethical experiments will end up being Wendigo food.

A Ranga is the queen of demons who danced too and had a horribly attitude, and likes to eat old people. (I don't know about the reverse part)
A link is connecting someone to something. Like an element. (example is Mondo with his electricity)
An adaptation is making someone adapt to something. Like adapting to having wings, and trying to fly. (example is kuzuryuu being a crow)
A replica is making someone like a copy of a creature or animal. (example is tsumiki being a naga)
