I used Roxbury as a name before I was aware of this family tree. In my story, Applejack is an earned nickname, with Roxbury Rose Smith being her true name. Her parents were named as Valencia and Bismarck. Granny's name is Carmen Oaks-Smith.

Interesting theory
How did she earn the nickname then?

Still working on that.
A few new ideas on it just occured to me.
Originally it was going to be that she saved her father when he gets pinned under a wagon he is working on, and like in Rarity Takes Manehattan with the cab, she uses her considerable back strength to lift the cart enough for Bismarck to get out from underneath. Being just a filly, the effort turns her face red as an apple, and she acted as a living 'jack. So Bismarck combines the two into Applejack.
