I use Photoshop to make the frames, just increase your canvas size and set it to whatever color you want it to be.

I think I put in about maybe 3 hours or so, most of it was done over short 15 or 2o minutes periods over lunch or when I have my morning coffee..

Ive been trying to mix it up a little, but I think I still have a lot of room for improvement. I'm thinking maybe working with pencil might be easier than with ink.

Pencil is easier, more seductive; but pen is more powerful. Actually, it's just that pencil doesn't give the same rich darks you get with ink. The rendering takes just as long, but you have to be careful to keep the graphite from spreading all over the place. You might try your hand with brushes. You can thin ink and build up tone with washes, try watercolors or thinned acrylics for color; or use the brush to make bold marks in your drawings. You can use brushes along with the pen, too

I have experimented a little with paint in the past and I quickly realized I really don't have any skill with a brush. This is probably due to the fact I haven't painted since elementary school, I really should take an intro course to painting!

We're not even really talking about painting. You can use a brush to thicken a line, black out a shape, heighten a form with white, or add transparent tone over an area. A watercolor course might be fun, but I think a bit more experimentation will yield the skills needed to add brushwork to your ink drawings.
Graphite is fine, but I hope you will continue your ink work. Lots of possibilities there
