Let's see... first you boil it for three hours, so the wool all falls off. Then you reach up the bung hole as far as your shoulder, grab hold of the root of the tongue, then pull all the innards out through the rear, turning them inside-out in the process. Put those aside for making blood pudding, haggis and even less mentionable courses, later. Chop of the head and bake it. Some people will even eat that ... Greeks, for instance. Finally, you have only the stuff left you can roast or cut into chops. Add thyme and fenugreek to taste, and get to it! Yum.
