Description While browsing through Whole Foods, I came across some vegan egg/spring rolls that I tried and really liked, so much so that it inspired me to try and make them myself. I made the wraps myself using whole wheat, and made the filling using tofu, cabbage, peas, green onion, and mushroom. They came out tasty!

I actually went by instinct, and tried to replicate the vegan egg rolls I had tried. I made a basic dough using just whole wheat, cut the dough into rectangles, and added the filling. I can't remember the exact measurements used for the filling, but I guess so long as you prepare/shred everything and mix them into a bowl, and scoop an even distribution onto the rectangle, and fold.

No leeks, though that's definitely not a bad idea! I also had the idea to use avocado, but I went with the tofu instead. Anyways, so happy you like it!

I think avocado would have been a great idea. It adds to flavor and texture. I suppose that would be something to consider for next time. <3
