You know, I'm not actually a consumed fan of MLP, and yet I liked this gals so much that I couldn't help but comment on how nice and elegant they look and all. I (try to) knit myself, so I hope that when I finally master it, I become able to do amirigumi as well done as yours.
I ended here because I originally stumbled upon your Tenth Doctor amirigumi, which I loved, by the way, and then the whole Doctor Who collection, then one thing led Β to the other so here I am and now you have a new watcher.

Yes The head, torso, neck, and legs (and horn and wings, if applicable) are all made separately and sewn together.
