und die details auf den Schultern und in generall die ganzen strokes um mehr texture reinzubringen.

For the Elite Knight set, it does indeed appear that they're only wearing Ringmail and a potentially a gambeson.
Can a sword (this one looks like a rapier) pierce through that?

Eeeeeeeh, probably not cleanly like that unless it's a perfectly straight thrust. But then again, Dark Souls has weapon buffs.
