I love Electrobolt. But so many times I'm reminded of Ed, Edd, 'n Eddy. Particularly, when big Ed discovered static electricity. Many's the time I'll be looking at an unsuspecting Splicer in a puddle, and big Ed's face appears in my mind's eye. 'Zappity zap-zap Double D'... And then the smell of singed hair, ozone, and just a hint of burnt pork fills the air just a little more...
All that said, my favorite is a tie between Telekinesis and Insect Swarm. TK, obvious that in real life, a move of the hand wouldn't be all it took to use it. In my case, I'd be using it to compress Splicers' rib cages so they couldn't breathe, break their limbs in horrific directions that shatter bones, and then snap their neck. It's so full of potential for cruelly evil ways to save the Little Sisters (Played both games through several times apiece, never harvested even one.). Insect Swarm though... Creeping around, bugs crawling all over my arms and face, my fear of bees finally overcome, and when someone attacks me, yelling 'Feel the sting, motherf***er! Feel it!'

But my choice of plasmid would be Winter Blast. I used it on Fontaine (big shiny guy on steroids and adam). Pretty effective
