i think i shall make my mum one of these for christmas...she doesn't know what she wants yet...not helpful, and mum likes turtles (she had two as pets when she was a kid).

What kind of fabric would you recommend? Also, I wasn't sure how you went about connecting the legs head and tail to the shell. Sorry for the newbish questions. I'm really new to this

And tutorials are for learning, so i'm glad you decided to ask.
Ok, first thing, i absolutly recomend polar fleece, specially since you are starting at this, cause it conceals really well the stitches and is so soft for plushies *-*
Now, about the stitches, you can see 2 of my favourites in this image: [link]
the second one is the one i use for everything in general, is very usefull and the result is very good and firm, the smaller the better
The third stitch is the one that would help you to join the pieces together, it's a little harder but you'll get the best result with it
Well, i hope that helped you a little, if you need anything else, just ask me
