A minstrel is a bard, or a medieval traveling musician. They would make up poems and songs, accompanied by other musicians or sometimes accompanying themselves on a string instrument such as a harp, and provide entertainment to people. They were revered storytellers as well, and noblemen and higher class folk often hired their own personal minstrels to entertain them.
Basically they're medieval singer/songwriters.
