I do wonder, would they still be alive in the barnacles as they are being digested or would they have suffocated inside that tight slimy mouth and gullet of the creature before they even realised the first painful sting of the digesting fluids dissolving their bodies into human soup?

IIRC in the game, any NPCs grabbed by barnacles stop moving almost immediately. The canon explanation is their necks are broken by the tongues.
