i just start coloring and have each color on a separate layer. I like your idea of coloring the picture white first so that you don't have to go back and erase the outside of the lines. My shading is quite simple though, i just color a bright color where i want the shadows, clean it up, then i change the color to a dark blue or whatever the majority of the picture has and then drop the opacity down between 20 and 30%. I'm too lazy to make a shadow in a darker shade of each separate color ^^

I believe you can do this in Photoshop, but I used Paint Tool Sai.
