Okay, I only found out about pokemon variations fairly recently (even though it's supposedly been around for ages?) and decided to give it a go

Eevee
+ Marble Fox
The pattern's not exactly the same, but the mask just didn't want to work in this one. The main reason eevee got a marble fox is because it is a coat pattern that only exists because of selective breeding. Eevee is all about adapting to the changing world, a lot of that change coming from humans, so it seemed appropriate. Also, they're both really cute :3

Vaporeon
+Siamese fighting fish
With such a large decorative frill around it's neck, I could see vaporeons making territorial displays like fighting fish do. I also thought it was an appropriate cross because both vaporeons and fighting fish are considered very beautiful

Jolteon
+Serval Cat
I was considering using a cheetah, but I'm pretty sure it's already been done. Servals also seemed like an appropriate cross for a jolteon because they are quite fast as well, but like jolteon, they aren't the fastest. I think I had other reasons, but I can't remember them right now >.>

Flareon
+Bat eared fox
They're both adorable.
Bat eared foxes also live in short grasslands which according to this article -> pokemaniacal.tumblr.com/post/3… may be an appropriate place for a flareon to live. (The article isn't cannon or anything, but it does make some interesting points)

Umbreon
+Cheshire Cat
A pokemon that becomes dark or evil because it befriends it's trainer? The Cheshire cat, whom Disney considers a villain regardless of his good advice to Alice, seemed like a good match.

Leafeon
+ Canadian Maple
I was going to go with cocoa and make it chocolate themed... But then I had a close look at the pokedex entry which basically says that leafeon was a pacifist pokemon that takes nothing and even cleans the air. It reminded me of the Canadian stereotype (which for the record, I think is absolutely precious) and I knew leafeon had to become Canadeon. Also, I couldn't not make that pun :3

Sylveon
x Haunter
Actually a fusion, but shhh.
Sylveon is cute, but I'm not a big fan of it's design for the same reason I'm not overly fond of glaceon - flesh ribbons. I mean seriously. It's creepy, wrapping its flash around a trainers arm so they can't escape >.< It also has those sightless looking eyes and can manipulate peoples feelings. I could imagine a little kid getting an eevee, raising it with a ton of love and having it evolve before they've started their journey. Then, the sylveon doesn't want its trainer out getting hurt, so they take them into the forest to steal them away for themselves. Like some fairies do. I think I might be reading to far into this though XD.
Back to the topic at hand, I was struggling to think of an appropriate species to merge sylveon with. Then I found the haunter Pokedex entry - It hides in the dark, planning to take the life of the next living thing that wanders close by.
The rest is history.

Glaceon
+Arctic fox (and points)
There is not a lot of information about glaceon to work with. Basically it freezes its fur into spikes and can control the temperature around itself. At least with a thick fluffy coat that would be easier to picture. I added points because they are exclusive to animals we've tampered with and highlight the coldest part of the body. This would be a good adaptation for a snow fairing critter as it would reduce the heat loss from those areas.

Espeon
+Japanese Bobtail
One of the stories associated with the maneki neko is about a cat that beckoned to a man, leading him to shelter before a massive storm hit. Our friend Espeon can sense minute changes in the air with it's sensitive fur. They also evolved because of a bond with their trainer, wanting to help them as much as they can. What's more helpful than beckoning money?
