I completely overlooked the fact that they haven't heard his name yet. I just assumed that they may have read it or heard it or he mentioned it sometime before. And now that I think of it they haven't mentioned "son(s)" either only "family". Man tiny details are huge! Nice work!!

That makes sense. I find it sounding funny because I haven't heard anyone say Sans Gaster or Papyrus Gaster and because I always just thought and accepted Gaster as part of his first name like someone would say Ally Kate or Sarah Grace as a persons first name

That's one possibility. It's also possible that Gaster is a surname, and he just happens to prefer being called by his surname. It's not super-common in the west, but it's hardly unheard of. (If you watch NCIS, then you'd be familiar with Gibbs... Leroy Jethro Gibbs.)
It could go either way, really.
