Gaster is actually his, more or less, last name. So if Sans and Papyrus are considered to be his sons, does that means their names are actually "Sans Gaster" and "Papyrus Gaster" ? I'm confused.

Technically sure, but the main name he goes by is Gaster rather than Wingdings. It would depend on how he prioritized his names and what he chose fits for the brothers. Realistically, it's probably "Gaster One Sans" and "Gaster Two Papyrus" Because of how he seems to prioritize the names.
