You know that you made a mistake in calculation? Parents, as you know, give us 50% of genes from each one. So :
Dr Whooves: Derpy:
21% 10% (genes unicorn)
22,5% 15% (genes earth pony)
6,5% 25% (genes pegasus)
Sum 50% 50%
Now probability:
Unicorn: 21%+10%= 31%
Earth pony: 22,5% + 15%= 37,5%
Pegasus: 6,5%+ 25%= 31,5%
Sum: 31%+37,5%+31,5%= 100%
The greatest probability of this is that Dinky could be an earth pony, but that doesn't exlude that she is an unicorn. That's only calculation of probability. The most important is how genes can combine. The bigger number in probability doesn't mean that this could be always.

I couln't help but notice the resemblence in the main and face she has with the Doctor, just as trunks trunks had no saiyan tail because of the resesive gene in puny humans, dinky also lacks wings because pegasi and earth pony are resesive genes interesting

Well, I've never taken the course, but I do think I am recognizing a pattern in the formula. Ironic that the Doctor has the winning amount of unicorn genes considering his fascination in unicorns (see The Doctor and Assistant).

I see how the numbers work and whats going on here, but I don't see any connection with Mandel's genetics here.

That is because this is for traits encoded on more than one gene. So you can have more than two genotypes in an individual. Height works that way in real life.
Really can't say more than this(well, I could deduce stuff from the picture itself but I don't want to right now), since I don't know much myself.
